Paste Tomatoes have more sugar, acids (for flavor), and pectin and have less water than other types, so they cook down quicker. The pretty shapes of the varieties in our collection will also decorate your garden as they grow. 'San Marzano' is an early, large classic Italian with long, cylindrical 5–6oz fruits; indeterminate, it ripens about 78 days from transplant. The heirloom 'Amish Paste' traces its origin to Pennsylvania, hence its name, and begins to produce oblong-oval fruits 80-85 days from transplant; indeterminate. Another heirloom, 'Martino's Roma', is a determinate type, which means its vines are compact and thus a good choice for containers and smaller gardens. Each red, pear-shaped fruit weighs about 2oz and will ripen in about 75 days. Our collection includes one plant of each variety, three plants total.
