Please note that we harvest about 30 lambs each fall and always sell out quickly. We will gladly book your order in advance for shipment beginning in mid-October.
Southdown sheep are large-framed animals with dense wool that grows slowly and does not pick up branches and burrs. We buy our lambs from a local breeder in the spring and turn them out on grass pasture with woods adjoining. They grow quickly, all bone at first, then start filling out to reach their full weight by October. Ours have a north-facing shed, fresh water, and a trough where they get lightly grained every morning, less for nutrition than to get a good look at them daily. As the weather cools, this bit of grain also helps the lambs add some natural marbling. Friends tell us that our lamb is unlike any they have ever eaten, perhaps because our mixed pasture is so rich and varied, perhaps because our animals are somewhat younger than the commercial lambs imported from New Zealand. Individual cuts are vacuum packed, flash frozen, and stored in our own freezer until shipped.
