Eggplants
Eggplants are handsome upright plants with pretty, violet blossoms and shiny fruits in many colors and sizes. We think they're among the most ornamental vegetable plants, and they look marvelous at the edge of a vegetable garden or perennial border. Glossy, creamy-fleshed Eggplants appear in all the classic dishes of the southern Mediterranean, from Eggplant Parmesan to Moussaka. Asian cooks also use them to full advantage.
