Lamb’s Ears (Stachys byzantina) are a fixture in most sunny borders, where they serve as superb edgers, providing contrasting silver-gray color and a fuzzy, velvety-soft texture that is irresistible to gardeners (and children). Also called Woolly Betony, Lamb’s Ears belong to a large genus of plants in the Mint family that includes upwards of 300 species of annual and perennial herbs. They prefer full sun and well-drained soil. Established plants will tolerate drought, which makes them a terrific choice for hot spots in the garden that tend to be dry. Plant them at the feet of Tall Bearded Iris, Peonies, Roses, and Eryngium, or use them at the edges of cottage or pollinator gardens. Plants will spread in a leisurely way in a favorable site, and unlike some members of the Mint family, they are easily removed where they aren’t wanted.
