The large, 12-16oz fruits are beefsteak types, slightly flattened; they ripen pale green with a pink blush on the blossom end. In salads, the bright green flesh of 'Aunt Ruby's German Green' partners brilliantly with slices of red, yellow, and orange varieties. When fried, they're sublime.
